Hyper Interdisciplinary Conference in Tokyo 2022

Humanity has been enriched by utilizing the workings of microorganisms as fermentation technology, such as sake making and food preservation. However, fermentation is complex. It has been considered halfway impossible to reproduce all aspects of fermentation using traditional industrial processes, such as isolating useful bacteria and thoroughly controlling and cultivating them under optimal conditions. In this session, we would like to discuss how to utilize complex microorganisms from the next generation fermentation process by utilizing cutting-edge science and technology. Can we perfect the rice bran at home, and can we perfect the terroir of NAPA's winery?

 

Not limited to the themes of this session, we will have a program of discussions among researchers, startups, and large companies from a variety of perspectives. For details, please refer to the conference website.
